4 c boiled rice
3 Tbsp oil
2 Tbsp minced onion
1/4 tsp garlic powder or 2 freshly minced cloves
2 Tbsp chopped mushrooms
2 whole eggs
1 Tbsp soy sauce
shredded canned ham, pork or chopped shrimp (optional)
Sauté rice in oil for 5 minutes, stirring occasionally.
Add green onions and mushrooms. If using meat, add it too.
Cook for several minutes.
Mix eggs with soy sauce with a whisk, then stir into pan.
Cook until eggs set.
