Skillet Mess

This is something I do when I don't feel like messing around too much. It's fast. It's easy, and everybody seems to like it. Usually I fix it for lunch, but sometimes I'll fix it for dinner. It's good for either meal.

Here we go. Remember to stir this now and then while it's cooking or it'll stick to the pan.

Get a big skillet and cook 1 pound of hamburger, sausage, or cut up stew beef or chicken on medium heat.  You can even do combinations.
-(If you use just chicken, use a cup of chicken broth in the pan.)

Add 1 cup each of mushrooms, peppers, mixed vegetables, and cut up onion.
-(frozen work great)

Cook until the vegs are softened but not mushy.

Stir in 2 cups of cooked rice.
-(white, brown, wild, whatever. It's up to you.)

Add Worcestershire, soy sauce, salt, and pepper to taste.

Once it's all well mixed, turn down heat to low and let cook, usually about 5-10 minutes.
-Remember to stir it now and then or it'll stick to the bottom of the pan.

Turn off the heat let it sit in the pan with a lid on it for about 10 minutes. The heat in the pan will do the rest. Cast iron works great for skillet mess.

You can even substitute a pound of shredded potatoes for the rice if you want.
-If you don't want to mess around with shredding potatoes, a box of those Hungry Jack cheesy hash browns works great.

This is one those things you can play with an come up with all sorts of tasty combinations, probably why I just call it skillet mess. It looks like a mess, but it tastes really good.
