Chocolate Whoopie Pies

1 cup butter flavor Crisco
2 eggs & 2 egg yolks
1 cup hot water
1 teaspoon baking powder
1 cup cocoa
2 cups sugar
1 cup buttermilk, or milk
2 teaspoons baking soda
4 cups flour
1/2 teaspoon salt

Preheat oven to 375 degrees.
Cream sugar and Crisco.
Add eggs, beat.
Sift all dry ingredients, except baking soda.
Dissolve baking soda in hot water.
Add buttermilk, or milk, to sugar mixture.
Stir, alternating dry ingredients and baking soda water.
Mix well.
Drop by spoonfuls onto clean cookie sheet. (DO NOT GREASE!)
Bake at 375 for 10 minutes.

Filling;
2 egg whites
2 teaspoons vanilla
4 tablespoons flour
4 tablespoons milk
1 1/2 cups butter flavor Crisco
4 cups confectioner sugar

Beat filling mixture, adding confectioners sugar gradually.
Beat until fluffy.
Place gob of filling on the flat side of cooled pie, then place another cooled pie on top (flat side to filling), filling in the middle.
(Think Oreo cookie)

Makes about 2 dozen pies, depending on sizes.

This is my grandmother's. I've never had it fail.
