Salsa Chicken Fiesta

2/3 cup reduced fat Bisquick
2 tablespoons water
1/4 fat-free cholesterol-free egg product, or 2 egg whites
1 1/2 cup shredded reduced-fat cheddar cheese
3 boneless skinless chicken breast halves, cut into 1/2 inch pieces
1 1/4 cup Old El Paso Thick n Chunky Salsa

Heat oven to 400
Spray a 8 or 9 9 inch square baking pan with Pam
Stir together Bisquick mix, water, and egg product.
Spread evenly in the pan.
Sprinkle with 1 1/4 cups of the cheese

Cook and stir chicken in non-stick skillet over medium-high heat until outside turns white.
Drain, stir in salsa, heat until hot.
Spoon over batter in pan to within a 1/2 inch of the pan edges.

Bake 22-25 minutes or until the edges are dark golden brown.
Sprinkle with remaining cheese.
Bake 1-3 minutes, or until the cheese melts.
Remove from oven.
Let set 1-2 minutes.
Loosen from sides of pan and serve.

6 average size servings.
