1 package long grain wild rice
(Uncle Ben’s Wild Rice Roasted Garlic works very well)
garlic powder, or Italian seasoning
4 pieces sea bass, or other white fish
garlic salt, lemon pepper, and paprika to taste
non-stick pan coating spray
1 10oz.package frozen petite peas, thawed and drained

Prepare rice according to package directions; if using plain rice season with garlic salt, or Italian seasoning to taste.
Preheat oven to 350F or 177C.
Lightly sprinkle fish with garlic salt, lemon pepper, and paprika.
Apply non-stick spray to a large non-stick skillet.
Over medium heat, sear fish with season side down first.
After 3 minutes, or until a crust forms, carefully turn fish over and sear other side.
Place rice and peas in a baking dish.
Place fish on top of rice and peas.
Continue to heat for 5 minutes.
Serve, or keep warm in oven.

Tasty tip: Add fresh squeezed lemon juice to fish before heating in oven. You can use the bottled stuff, but I prefer the fresh. I think it has a better taste for cooking.
